The Proof is in the Lobster at Catch 35’s Annual Lobster Bash

This year’s Lobster Bash menu is all about the “Maine” ingredient…….Buttery, Sweet, Rich, yet Delicate North Atlantic Cold Water Lobster!

A few facts about North Altantic Cold Water Lobsters……

  1. North Atlantic lobsters are wild caught in traps along the bottom of the ocean’s floor.
  1. Distinguished by their two large claws, North Atlantic Cold Water lobsters have meat in their claws as wells as their tails.
  1. Available year round, North Atlantic lobsters are enjoyed around the world because of their firm texture and sweet taste.
  1. Lobster is low in saturated fat and is a very good source of protein and selenium.
  1. When cooked the outer shell turns a bright red color, while the meat turns from translucent to snowy white.

Cooking techniques for Cold Water Lobster

Boiling

-fill a big pot (2 gallons) with seawater or heavily salted water. Place the live lobster head first into the boiling water. Usually 8 minutes per pound of lobster. Crack open and devour!

Steam

-place about 2 inches of seawater in the bottom of a large pot. Place a steam rack on top of the water in the pot. Fill with lobster and cover. Steam for about 10 minutes per pound as water boils at the bottom of the pot.

Grill

-Butterfly the lobster tail and lay the meat on the tail. Brush with olive oil. Place meat side down on medium heat on the grill for 5-7 minutes until golden brown.

You can also fry, broil, and sauté North Atlantic Cold Water lobster. To preserve the firm texture and sweet ocean flavors boiling, steaming, and grilling are preferred.
